The Glass Door restaurant, part of Bite San Diego Food Tour, has found a new inspiration with recently appointed Executive Chef Brent Calley. A combination of his exquisite culinary skill, creative genius and local California vibe offer the Little Italy restaurant a certain ‘je nais se quoi’, usually found in some of the finest independent establishments only the locals know.
Calley offers an array of experience in modern hospitality, and has inspired several other restaurant menus locally with his talent in the culinary arts. The Glass Door is proud to offer new menu selections by the new executive chef, who carefully designed each dish to blend the Mediterranean coast with a taste of California. The use of fresh local ingredients have added a special touch to the newest fall menus with a local feel and are sure to satisfy the taste buds of any palate.
“My cooking style is pure California and very San Diego, approachable, relaxed and straightforward, and I want the ingredients to speak for themselves,” says Chef Calley. “The dishes are modern takes on honest food and classic dishes – prepared and presented with clean flavors and in a lighter style that today’s diners really want. The food pairs nicely with our wine, beer and hand-crafted cocktail selection and of course, the Glass Door’s famous view.”
The dinner selections are inspired by the culinary capitals of Europe – France, Spain, Northern Italy and countries along the Mediterranean – with a distinct California style. Ingredients are sourced from the Little Italy Mercato, other local farmers markets and specialty shops around Little Italy.
“Our chef has the ideal combination of cooking skills and hospitality experience and we are excited for people to taste his food and make the Glass Door the ‘go-to’ restaurant in Little Italy for locals and visitors alike,” said Christian Cardnuto, food and beverage director for the Glass Door Restaurant and Porto Vista Hotel. “Brent will be a chef to watch in San Diego.”
